Our Favorite Meals

Here are some of our favorite meals.  As I add new ones, I'll put them at the top.

Pizza
We love pizza! And it's easy to make with relatively "real" ingredients.  We usually use whole wheat pita bread as the crust, and we usually cook them on the grill until the cheese melts.  If you look for it, you can find spaghetti sauce or tomato paste that is basically made of just tomatoes and a little salt.  We topped the pizza above with tomato, basil, red onion, and some Italian sausage we get from a local farm.  And cheese, obviously.  Here is another favorite:

Breakfast for Dinner
This picture is just one example, but we have breakfast for dinner pretty often around here and I love it more than any other meal.  Here are some examples: 
1.Birds' nest and breakfast sausage.  Made with whole wheat bread, local pastured eggs, and local sausage with no additives.  
2.  Oatmeal and fruit smoothies.  Oatmeal sweetened with raw honey or fresh fruit, and a fruit smoothie made out of yogurt and whatever fruit we have in the freezer, plus a little honey.
3.  Pancakes and scrambled eggs.  Pancakes made with multi-grain or whole wheat pancake mix and real maple syrup.  We usually make strawberry or blueberry pancakes with the diced fruit inside.

Lettuce Wraps
Kolby came up with this recipe.  We grill flank/skirt steak and cut it into strips.  Then we dice and mix cherry tomatoes, green onion, cucumber, basil and/or cilantro. We toss it all together with some soy sauce (probably not a real food, but oh well!), white whine vinegar, and a little salt & pepper.  We serve it on bibb lettuce, but iceberg could probably work, too.  It's something fun and different, and it's easy to experiment with based on what we happen to have around at the time.

Greek Salad with Chicken
We love Greek salad.  We use baby spinach/baby arugula mix, and top it with grilled chicken, red onion, tomatoes, cucumber and feta cheese.  Because store-bought salad dressing is so unhealthy (veg. oils!), we make our own and it's really easy: equal parts EVOO, lemon juice and red wine vinegar, then we sprinkle in some dry basil or any Italian herb and a little salt & pepper.  Mix vigorously and pour over salad immediately.  We only make enough dressing for one meal because the EVOO congeals and looks disgusting if you try to store it in the fridge.
